About HACCP
HACCP stands for Hazard Analysis Critical Control Point and from 1st January 2006, new European Community Food Hygiene Regulations replaced the existing laws within the UK, governing food safety. Environmental Health Departments attached to each District or Borough Council will be implementing these changes and will be making sure on their visits to your premises that the new regulations are being fulfilled within your establishment. A large part of these regulations require you to keep detailed records of the food you prepare in the form of HACCP documents.
As frightening and confusing as it all sounds this programme will simplify the process of writing each document allowing you to spend more time in running your business but with the knowledge that you have the necessary safeguards in place.
